There are so many peach varieties I can’t identify them all when I see them. For help with that I turn to a book just out late last summer, “Just Peachy,” by another South Carolina cook, Belinda Smith-Sullivan.

Having moved away, I have a heightened appreciation for, and longing, for foods from the South. Foremost among those rich flavors, each filled with sunshine, are my love for peaches. For me, I love to use them like I use ginger — in both savory and sweet dishes. So, wow, is this the book for me! First off, the binding and printing is top-notch. The lovely, full-page photography, for many of the recipes, transforms the book. It is lovely enough to almost become a coffee-table book, with beautiful layout and typefaces throughout. The 30+ page introductory sections are both inviting and illuminating, filled with practical tips, including canning and freezing. Each recipe is very clear and few would be difficult to prepare. Yet each dish bursts with flavor, like the Spicy Oven Ribs with Peach Barbecue Sauce. The Country Peach Tart turned out as lovely as its photo, with a burst of Southern sunshine in each bite. I was thrilled to find a recipe for the super simple Peach Cobbler that I had eaten at church events in the South! So easy and incredibly delicious, especially the caramelized edges! A scoop of vanilla ice cream completes it. There are about 130 pages filled with dozens of recipes. If you love peaches, or love someone who does, this warm and inviting cookbook would be an excellent addition to their collection.

“Peach season is short-lived and it can be even shorter depending on the location. On average, peach season lasts from late May to mid-September,” Smith-Sullivan said. “The easiest way to extend the season — and enjoy this versatile fruit year-round — is to can and freeze peaches while they are plentiful and inexpensive.” “Just Peachy” contains 70 recipes that cover a wide range of dishes that include peaches. Recipes range from breads, breakfasts, appetizers, entrées and desserts to sauces, preserves, condiments and drinks, all beautifully photographed. Chef Smith-Sullivan has included facts about peaches, information on growing and growers, festivals, a list of all peach varietals and how to use them and the history of peaches.
