Israeli Couscous With Celery & Sun-Dried Tomatoes
Salt and freshly ground pepper
1 cup (6 oz/185 g) Israeli couscous
4 celery ribs, cut into 1⁄4-inch (6-mm) dice
6 drained oil-packed sun-dried tomatoes, minced
1 cucumber, peeled, seeded, and finely chopped
1⁄4 cup (1⁄3 oz/10 g) chopped fresh flat-leaf parsley
1 Tbsp fresh lemon juice
1⁄2 tsp dried oregano
1⁄4 cup (2 fl oz/60 ml) extra-virgin olive oil
1⁄4 cup (1 oz/30 g) toasted almonds, chopped
*Serves 4
In a saucepan, bring 2 cups (16 fl oz/500 ml) water to a boil over medium-high heat. Add 1⁄2 tsp salt and the couscous. Reduce the heat to low, cover, and simmer until most of the water has been absorbed, about 10 minutes. Drain the couscous and transfer to a bowl. Add the celery, sun-dried tomatoes, cucumber, parsley, lemon juice, oregano, oil, 1⁄4 tsp salt, and 1⁄2 tsp pepper. Taste and adjust the seasonings. Sprinkle the toasted almonds on top and serve.

In a saucepan, bring 2 cups (16 fl oz/500 ml) water to a boil over medium-high heat. Add 1⁄2 tsp salt and the couscous. Reduce the heat to low, cover, and simmer until most of the water has been absorbed, about 10 minutes. Drain the couscous and transfer to a bowl. Add the celery, sun-dried tomatoes, cucumber, parsley, lemon juice, oregano, oil, 1⁄4 tsp salt, and 1⁄2 tsp pepper. Taste and adjust the seasonings. Sprinkle the toasted almonds on top and serve.
